When Troy joined us in 2022 as a Kitchen Porter at The Justinlees, he had no idea he would rise to Head Chef within two years. Through curiosity, consistency and the right development pathway, he built a kitchen career he’s genuinely proud of.

How do you progress from Kitchen Assistant to Head Chef?
Troy’s journey began where many successful chef careers start: behind the scenes.
Washing up. Observing service. Watching experienced chefs on the line. Learning the rhythm of a busy pub kitchen.
Starting as a Kitchen Porter gave him exposure to food preparation, hygiene standards and kitchen operations. From there, he stepped into a Chef role, building hands-on experience in:
- Food prep and service
- Stock control and kitchen standards
- Working under pressure
- Team collaboration during peak service
After around a year, he began thinking seriously about career progression in hospitality.
“I asked about moving up because I wanted more responsibility.”
That single conversation opened the door to structured development.
What training helps you fast-track a Chef career?
To accelerate his kitchen career path, Troy joined our Kitchen Team Leader development programme. This structured training focused on:
- Leadership skills in hospitality
- Commercial awareness and food cost control
- Stock management and variance
- Leading shifts and supporting team performance
By investing in formal development, he transitioned from working in the shift to leading it.
His time at The Justinlees was a turning point. It’s where his confidence grew and where he began preparing for senior kitchen leadership.

He also credits Accredited Kitchen Manager Garth for helping him stay motivated during challenging moments.

What steps took him from Kitchen Team Leader to Head Chef?
After establishing himself as a Kitchen Team Leader, Troy made a bold move to The Hunters Tryst for a new challenge and larger operation.
He enrolled on a second development pathway, this time focused specifically on becoming a Head Chef. His training included time at our Kitchen Skills Academy in Watford, where he refined:
- Advanced kitchen management skills
- Financial accountability
- Team culture and performance leadership
- Operational excellence in high-volume kitchens
In August 2024, he stepped into the Head Chef role.
